Maharashtrian Sprouted Green Gram Usal

This is a recipe for preparing at home typical Maharashtrian Style Sprouted Green Gram or Moong Dal Usal. Moong is easy to digest and hence easy on the stomach, it is also healthy and nutritious and can make an ideal item in the Tiffin Boxes of school going children along with Chapatti.

Preparation Time: 20 minutes
Serving: 4 persons

Ingredients
2 Cups Sprouted Green Gram
1 Tablespoon Coconut (shredded)
1 Tablespoon Coriander
Salt as per taste

For the Tadka
1 Tablespoon Oil
1 Teaspoon Mustard Seeds
1 Teaspoon Cumin Seeds
5-6 Curry Leaves
¼ Teaspoon Asafoetida
1 Small size Onion (chopped)
1 Tablespoon Ginger-Garlic Paste
2 Green Chilies (chopped)
¼ Teaspoon Turmeric Powder

Preparation
First, Soak the Green Gram for 6-7 hours in Water, remove excess Water, after that keep them in a container for 10-12 hours, and then remove from the container.
Add ¼ cup of Water to the Sprouted Green Gram, put in a pressure cooker, and cook until you get one whistle of the pressure cooker.
Heat the Oil in a Kadai and add the Mustard Seeds, Cumin Seeds, Asafoetida, Onion, and Ginger-Garlic Paste, Green Chilies and Turmeric Powder and sauté for 2-3 minutes on a slow flame.
Add cooked Green Gram, Salt and sauté for 4-5 minutes on a slow flame, and then add Coriander, Coconut and mix it well.
Serve hot with Chapatti.
