This is a Recipe for making at home Spicy Hyderabadi Style Stuffed Bitter Gourd or Karela. This is a specificity Hyderabadi main course vegetable dish, which is prepared using freshly prepared spicy stuffing Masala. The Bharwan Karela is not only good to taste, but also healthy and nutritious.

Serves: 4 Persons
Ingredients
6 Medium size Bitter gourd
For the Stuffing:
¼ Cup Ani seeds
1 Cup Dry Coconut
2 Tablespoon Coriander Seeds
1/2” Cinnamon piece
6 Cloves
2 Teaspoon Cumin Seeds
5-6 Almonds
1 Tablespoon Sesame Seeds
4 Red Chili
¼ Teaspoon Turmeric Powder
2 Tablespoon Tamarind Pulp
¼ Cup Coriander Leaves (chopped)
Salt and Jaggery as per taste
½ Cup Oil
Preparation
Wash the Bitter Gourd and slit them horizontally from one side. Remove the seeds and then boil the Bitter Gourd for 5 minutes.
For the Stuffing: Slightly roast the Ani Seeds, Dry Coconut, Coriander Seeds, Cumin Seeds, Almonds, Sesame Seeds and grind them into a paste. Then slightly roast the Red Chili, Cinnamon, Clove, Salt and then them grind into a paste. Mix both the grounded pastes together and fill it into the boiled Bitter Gourd.
Heat the Oil in a nonstick pan and arrange the stuffed Bitter Gourd over the pan. Cover the pan with a lid and cook them for 5-7 minutes on a slow flame. Remove the lid and add then add the Tamarind Pulp, Jaggery and a cup of Water and cook for 5 minutes on a slow flame. Garnish with chopped Coriander Leaves.
Serve hot with Bhakri or Chapatti.
