Tasty and Crispy Paneer Matar Kachori

This is a Recipe for making at home crispy Paneer Matar Kachori. The Paneer-Matar Kachori is a tasty and delicious snack, which makes the use of Paneer and Green Peas as the main ingredients along with a freshly prepared Garam Masala. This Kachori, which is a filling snack can be serverd for breakfast or as a tea-time snack, it is also a suitable snack for kitty and cocktail parties.

Preparation Time: 45 Minutes
Serves: 10-12 Paneer-Matar Kachori

Ingredients
For the Stuffing
½ Cup Paneer
½ Cup Green Peas (boiled)
3-4 Green Chilies (chopped)
7-8 Garlic Petals
½ Teaspoon Aniseed
1 Teaspoon Garam Masala
1Teaspoon Red Chili Powder
Salt as per taste

For the Covering
1 Cup Refined Flour
1 Tablespoon Cornflour
1 Tablespoon Oil (hot)
Salt as per taste
Oil for frying the Kachori

For the Tadka
1 Tablespoon Oil

Preparation
For the Stuffing
Boil the Green Peas and mash them. Grind the Garlic, Ani Seeds and Green Chilies. Shred the Paneer.
Heat the Oil in a Kadai and add the grounded Masala and saute for a minute or so and then add the shredded Paneer and saute for a minute. Then add the Green Peas, Garam Masala, Salt, Red Chili Powder, mix it well and cover the Kadai with a lid and cook for two minutes on a slow flame.

For the Covering
Mix the Refined Flour, Corn flour, Salt and hot Oil and prepare a thick Dough and keep it aside for 30 minutes. Then prepare 10-12 balls from the Dough.

Roll the Dough Ball in to Puri size shapes and insert a tablespoon of the mixture into it and close the Puti and roll it slightly to get it into a Puri like shape. Prepare the remaining Kachori as per the same procedure given above.

Heat the Oil in a Kadai and deep-fry the Kachoris until they turn brown and crispy.

Serve the Kachori hot with Tamarind Chutney or Tomato Sauce.
