This is a simple step-by step Recipe for making at home tasty Ananas-Nariyal Kheer or Pineapple – Desiccated Coconut Dessert. This is a sweet and delicious Dessert dish, which is a combination of the Kheer and the Pudding.
Pineapple Desiccated Coconut Dessert: 30 Minutes
Serves: 4 Persons
Ingredients
1 Cup Pineapple pieces
2 Table spoon Rice
2 Table spoon Desiccated Coconut
2 Cups Milk
2 Table spoon Sugar
2-3 Drops Pineapple Essence
2 Pinch Lemon Yellow Color
½ Table spoon Ghee
Dry fruits for Garnishing

Preparation
Soak the Rice for 2-3 minutes and then drain the Water and keep for drying on a napkin. After 15-20 minutes, grind it to a thin powder.
Keep the Pineapple pieces in a bowl add a teaspoon of Sugar and cook for a minute in the Microwave.
Heat the Ghee in a Kadhai and then add the grounded Rice powder. Fry for 5 minutes on a slow flame and then add the Desiccated Coconut and fry for 2 minutes on a slow flame.
Add ¼ Cup of the Water and cook for 2-3 minutes. Add Milk, Yellow Color and Sugar and cook for 5-7 minutes.
Add the Pineapple pieces and mix it well. Then keep for Cooling.
When it gets cold, add Pineapple Essence and mix it well. Keep it in the Refrigerator.
Serve Cold.
