This is a Recipe for Spicy Carrot Stuffed Paratha. This is a Healthy Paratha for the Tiffin Boxes of school going kids.
Spicy Carrot Stuffed Paratha: 40 Minutes
Serves: 6 Parathas
Ingredients
For the Stuffing
2 Cups Carrot (grated)
2 Tablespoon Gram Flour
½ Tablespoon Oil
1 Teaspoon Cumin Seeds
¼ Tea spoon Asafoetida
1 Tea spoon Red Chili Powder
Salt as per taste
For the Covering
2 Cups Wheat Flour
Salt as per taste
Preparation
Lightly squeeze the grated Carrot and keep the squeezed Juice aside. In the Wheat Flour add the Carrot Juice, Salt and enough Water and prepare Dough by kneading it with a little Oil. Divide the Dough in to ten balls.
Heat the Oil in a kadhai and add the Cumin Seeds, fry for a minute and then add the Asafoetida, grated Carrot and Mix it well and cook for two-three minutes on a slow flame. Add the Salt, Gram Flour, and Red Chili Powder, mix it well, and cook until the mixture is dry.
Roll each ball into a small round size Puris, add one table spoon Carrot stuffing over it, and close it from all sides. Roll again carefully to make a stuffed Paratha.
Shallow fry using Oil. Serve hot.
