This is a simple to understand step-by-step Recipe for making at home Orange Coconut Modak or Santra Naralache Modak as this Modak variety is called in Marathi. The Santra Naralache Modak can also be for Ganesh Chaturthi or Sankashti Chaturthi as an offering to Ganesha.
Fresh Oranges are used to prepare this sweet and delicious Modak; however, canned Orange Pulp can also be used when Oranges are not in season.

Orange-Coconut Modak Preparation Time: 45 Minutes
Serves: 11 Modak
Ingredients
For the Covering
1 Cup Refined Flour
1 Cup Semolina (Suji/Rawa)
1 Tablespoon Oil
Salt as per taste
For the Filling
2 Cups Coconut (shredded)
2 Cups Milk
2 Oranges (fresh)
¾ Cup Sugar
2 Drops Orange Emulsion
Ghee for frying the Modak
Preparation
Peal the Orange. Mix the Refined Flour, Semolina, hot Oil, Salt and sufficient Water to prepare a thick Dough. After 30 minutes prepare 11 equal small lemon sized balls from the Dough.
In a kadai mix the shredded Coconut and Milk and cook until become the mixture thickens.
Then add the Sugar, Orange Segments, Orange Emulsion and cook until dry.
After the mixture cools down, divide it into eleven equal portions.
Roll the Dough Balls into Puri like Shapes, keep a portion of mixture over the Puri, close it with your hands, and give a Modak shape.
Heat the Ghee in a kadai and deep fry the Modaks until changes the color into light brown.
