This is a easy to follow Recipe for making at home sweet and delicious Khajur or Dates Kachori. The Khajur Ki Kachori is a different and unique kind of sweet Kachori, which is prepared using Dates and is rarely found in Mithai Shops.
The Khajur Ki Kachori makes a great and unusual snack, which is also suitable for any kind of party, including kitty parties.
Dates Kachori Preparation Time: 30 Minutes
Serves: 4 Persons
Ingredients
For the Filling
25 Dates (Khajur)
5 Cashew nuts (powder)
5 Apricots (Jardalu) (chopped)
6 Almonds (powder)
1 Table spoon Poppy Seeds (Khas-Khas)
1 Tea spoon Cardamom Powder
For the Covering
1 Cup Refined Flour (Maida)
½ Cup Wheat Flour
1 Tea spoon Sesame Seeds
1 Table spoon Oil (hot)
Salt as per taste
Warm Water as required

Preparation
For the Covering – Mix the Refined Flour, Wheat Flour, Sesame Seeds, hot Oil, Salt and Warm Water and then prepare a tight Dough.
For the Filling – Clean and Wash the Dates and remove the seeds and then grind the Dates in to a paste. Then add the Cashew nuts powder, Almonds powder, Poppy Seeds, Cardamom powder and prepare a Dough.
Take two plastic papers and roll the Dates Dough like a thick Chapatti. Then it into triangular shapes and keep aside.
Roll the medium size Chapatti and cut in to triangular shapes.
Then insert the cut Dates Dough inside two cut covering pieces.
Heat the Oil in a Kadhai and deep-fry the Kachori until color change in to light brown.
