Recipe for Chakli

This is a step by step Recipe for preparing the famous Maharashtrian Chakli. The Chakli is one of the most famous of the traditional and authentic Maharashtrian recipes. The Chakli is a must Faral item during the festival of Diwali in Maharashtra.
I have given two sets of ingredients; you can use any one of them as per your wish to make Kurkurit Chakli at home.

Ingredients
For Chakli Atta (It’s call Bhajani)
4 Cups Rice
1 ½ Cup Urad Dal
1 Cup Mung Dal
1 Cup Chana Dal
1 Cup Raw Poha
½ Cup Jeera
½ Cup Coriander seeds

OR
4 Cup Rice
2 Cup Chana Dal
1 Cup Urad Dal
½ Cup Raw Poha
½ Cup Jeera
1 Tea spoon Methi Seeds

First wash the Rice, Urad Dal, Mung Dal, Chana Dal separately and then drain the water and spread on one cloth for one day. (Do not wash Poha, Coriander seeds and Jeera)
After that fry Rice, Urad Dal, Mung Dal and Chana Dal separately.
Then fry Poha, Jeera and Coriander seeds and mix in to the Dal and then grind it.

Other Ingredients
1 Table spoon Red Chili Powder
1 Table spoon Ajwain
3 Table spoon Til
4 Table spoon Oil (Hot)
Salt to taste
Oil for frying

Preparation
First take 4 cups of Bhajani then add Red Chili powder, Ajwani, Teel, Salt and mix it well. Then add hot oil and mix it well.
Heat 2 cups of water and then put it in to the mixture and make a Dough and then keep aside for 5-10 minutes,
Then prepare chakli on one paper with a Chakli Maker.
Heat the oil in kadai and deep fry the Chakli.

Note: While frying the Chakli. First keep on full sim put the chakli and then on slow sim and fry till color change in to light brown.
