This is a Recipe for preparing spicy Restaurant or Dhaba Style Masala Chole. Chole dishes are more often than not identified with Punjabi cuisine.This is an traditional and authentic Punjabi Vegetarian Chole dish for the main course.
Ingredients
175 Gram Chole
2 Tomatoes
2 Table spoon fresh Coriander, Chopped
Ghee
Salt to taste
For Masala
2 Big Onions
1 Table spoon Khus-Khus
2 Table spoon fresh Coconut
2 Pieces Cinnamon
2-3 Cloves
10 Black Pepper seeds
5 Green Chilies
6 Cloves Garlic
1 Ginger
½ Table spoon Chili powder
½ Table spoon Turmeric powder
½ Table spoon Cumin
Mustard seeds
Preparation
Soak Chole overnight. Pressure cook with 3 glasses of water with a pinch of Soda-bicarb and Salt.
Heat Ghee in a handi or Utensil. Fry the Masala, adding Cumin and Mustard Seeds for 4 to 5 minutes until golden brown. You may add curry leaves too. Add Tomatoes and Sauté for 4 to 5 minutes. Add Chili powder and Turmeric powder. Stir fry. Then add the Chole with water and simmer for 10-15 minutes to make a coarse curry.
Garnish with Coriander and serve hot with Parathasor Puris.
