This is a Recipe for preparing restaurant style Apricot Chicken at home. This Chicken dish is also known as Murg Khubani or Jardalu Chicken, a spicy Apricot flavored Chicken Gravy.
The recipe, which, I have given is simple and in a step-by-step manner to make the preparation of Chicken Khubani as easy as possible.
Chicken Khubani [Jardalu] Preparation Time: 45 MInutes
Serves: 4 Persons
Ingredients
8-10 Medium Sized Chicken Pieces
Eight Khubani [Apricots]
Two Medium Sized Onions
Two Medium Sized Tomatoes
Two Clove Garlic [Lasoon]
½ Teaspoon Ginger [Adrak]
¼ Teaspoon Lal Mirch Powder [Red Chili Powder]
¼ Teaspoon Kesar [Saffron]
One-Tablespoon Hot Milk
2 Tablespoon Cooking Oil
¼ Teaspoon Garam Masala
2 Teaspoon Salt
Preparation
Wash the Chicken Pieces and keep them aside.
Clean the Apricots and stone them and keep aside.
Chop the Onions into fine slices.
Boil the tomatoes for 2-3 minutes and then remove them from the flame and skin and chop them coarsely.
Grind the Garlic, Ginger and Chili together to prepare a paste.
Soak the Saffron into the Milk so as to dissolve the Saffron Sticks.
In a Kadai, heat the Oil and Sweat the Onions and then add the Garlic-Ginger-Chili paste and fry for about 5 minutes, stirring all the time.
Then add the Chicken Pieces, Garam Masala, Tomatoes and Salt and add 1 ½-cup warm water and cover the Kadai and let the Chicken cook until it is tender.
Then, remove the cover and add water if the water in the Kadai has evaporated, then add the Saffron and Apricots and let it cook until the Apricots are soft and tender.
