This is a simple and easy to follow Recipe for preparing at home tasty authentic Maharashtrian Style Besan Peeth Perun Kothimbir Chi Bhaji or a main course vegetable preparation using Coriander Leaves as the main ingredient along with Gram Flour.
The Kothimbir Bhaji is a traditional Maharashtrain vegetable preparation that goes nicely along with rice or chapattis.

Besan Peeth Perun Kothimbir Chi Bhaji Preparation Time: 20 Minutes
Serves: 3 Persons
Ingredients
One Bunch of Coriander Leaves or 4 Cups Coriander Leaves (chopped)
¾ Cup Gram Flour (Besan)
1 Tablespoon Coconut (grated)
Three Green Chilies
1 Teaspoon Red Chili Powder
Salt as per taste
For the Tadka
1 Tablespoon Oil
1 Teaspoon Mustard Seeds
1 Teaspoon Cumin Seeds
6-7 Garlic Petals (mashed)
Three Green Chilies (chopped)
¼ Teaspoon Asafoetida
¼ Teaspoon Turmeric Powder
Preparation:
Roast the Besan for 3-4 minutes on a slow flame. Clean and wash the Coriander Leaves and keep them aside for 10 minutes then chop them.
Heat the Oil in a Kadai and add the Mustard Seeds, Cumin Seeds, Asafoetida, Garlic, Green Chilies, Turmeric Powder, and Salt and then add the chopped Coriander Leaves, mix it well. Then keep the plate over the Kadai for 2-3 minutes after, which add roasted Besan and mix it well.
Then cook the Bhaji for 4-5 minutes on a slow flame or until it become slightly dry.
Garnish with grated Coconut and serve hot with Chapatti.
