This is a Recipe for making at home sweet, tasty and delicious typical Maharashtrian Style Sweet Corn Modak or Kansache Modak as this Modak variety is called in the Marathi language. These Sweet Corn Modaks using a grated Sweet Corn Stuffing are another one of my special Modak Variations, which can be served as Prasad to Ganapati for Ganesha or Sankashti Chaturthi.

Preparation Time: 60 Minutes
Serves: 20 Modak
Ingredients
For the Stuffing
2 Cups Sweet Corn (grated)
¼ Cup Ghee
2 Cups Milk
1 Cup Sugar
1 Teaspoon Cardamom Powder
¼ Teaspoon Saffron (soak in Milk)
For the Covering
2 Cup Refined Flour
½ Cup Semolina (Suji)
¼ Cup Ghee (hot)
Ghee for deep frying the Modak
Preparation
For the Filling: Heat the Ghee in a Kadai and add the grated Sweet Corn and keep stirring continuously till the color changes. Add the Milk and cook till the Milk is absorbed. Then add the Sugar, Cardamom Powder, and Saffron and cook until the mixture thickens and becomes slightly dry. Remove from the flame and keep it aside for cooling. Then prepare 20 equal sized balls from the Modak Mixture.
For the Covering: Mix the Refined Flour, Semolina, and Hot Ghee and prepare a thick Dough and keep it aside for 20 minutes. Then prepare 20 equal sized balls from the Dough. Roll the Dough Ball in a round Puri like shape. Stuff the Corn filling inside the Puri and close it and then give the Modak shape with your hands.
Heat the Ghee in a Kadai and deep fry the Modak till color changes into the light brown.
