This is a Recipe for making at home typical Punjabi Spicy Aloo Capsicum Sabzi. This is a spicy vegetable preparation prepared using Shimla Mirch and Potatoes and is part of the main course, which tastes equally good with both rice and Parathas.

Preparation Time: 30 Minutes
Serves: 4 Persons
Ingredients
2 Big Size Onions
2 Medium Size Capsicum
2 Big Size Potatoes
Salt as per taste
2 Table spoon Oil
½ Tea spoon Asafoetida
1 Tablespoon Ginger-Garlic Paste
1 Teaspoon Red Chili Powder
½ Teaspoon Turmeric Powder
½ Teaspoon Cumin-Coriander Powder
½ Teaspoon Garam Masala
Preparation
First Peal the Potatoes and Onion and Capsicum into long horizontal slices.
Heat the Oil in a Kadai and add the Asafoetida and the Onion and saute for 2-3 minutes or until the color changes in to light brown.
Then, add the Ginger-Garlic Paste, Turmeric Powder, Red Chili Powder and Salt and mix it well.
Then, add the Potatoes and Capsicum and mix it well.
Cover the Kadai with an inverted stainless steel plate and add some Water over the plate and cook the Sabji for 10-12 minutes on a slow flame.
After 10-12 minutes remove the plate and check if the Potatoes are tender or not.
Then add the Cumin-Coriander Seed Powder and Garam Masala and mix it well and cook for 2-3 minutes on a slow flame.
Serve the Punjabi Aloo Capsicum Sabji hot with Paratha.
